Cinnamon Sugar Coated Puffs 糖莎翁


Just some puffs without filling and simply coated with some sugar and cinnamon mix. They are puffs! Not chicken wings la LOL! Anyway, you can do away with the cinnamon if you do not like it.

Ingredients:
110g plain flour
170ml of water
15g of butter
3 eggs
4 tbs of castor sugar/icing sugar
1 tsp of cinnamon powder (12:1 ratio)
Some oil for deep frying

Here's a guide to what proportion you would like to use for the sugar and cinnamon mix.
Sugar to Cinnamon
3:1 - 1/4 cup to 4 tsp
4:1 - 1/4 cup to 1 tbs
6:1 - 1/4 cup to 2 tsp
8:1 - 1/2 cup to 1 tbs or 2 tbs to 3/4 tsp
12:1 - 1 tbs to 1/4 tsp
1) Add butter to the water, stir and bring water to a boil. Lower heat and add in the flour. Off heat and mix until a dough is formed. Let the dough cool down.
2) Add one egg at a time to (1) and whisk mixture till smooth. You can use a mixer or a hand-whisk.

3) Scoop some of the mixture with your fingers and clench your fist (just like how you will make fish balls out of fish paste), a fishball size mixture will emerge. Scoop mixture off your hand using a spoon and drop it inside the hot oil.

4) Deep fry till golden and drain off excess oil with paper kitchen towel before coating them with the sugar and cinnamon mix.

Enjoy with a cup of hot tea or coffee!

Almond Jelly with Longans


Almond jelly with Longan not from premix. You either hate it or love it like mad. Yea, I'm one of the mad ones. This dessert always reminds me of my beloved grandma in heaven. This recipe is so good I eat liao want to cry 😂 okay I over reacted but it's really very nice la :)



This recipe serves 10

Ingredients:
1 packet of agar agar powder (white)
1600ml of water
10 tbs of sugar
1 can of evaporated milk (carnation full cream)
325ml of almond syrup (Sim Teck Hiang almond syrup comes in 650ml. Use only half of it.)
2 cans of longan (drain off the syrup)

1) Dissolve powder in water. Add sugar, stir constantly and bring to boil over low heat.

2) Off heat and let mixture cool slightly. Stir in milk and syrup until well mixed.

3) Layer longans at the bottom of mould. Ladle some mixture over longans and let set in fridge for a little while so longans stay at the bottom.

4) Bring out from fridge and pour remaining mixture into mould.

5) Once mixture is cooled, chill in fridge for 4 hours or until the jelly is completely set.

Herbal Kampung Chicken Stew


Herbal kampung Chicken Stew cooked by my friend. It's a pretty simple recipe yet so tasty. So...would like to share it with all of you.


Ingredients:
3 PCs of beiqi 北萁
5 PCs of danggui 当归
6 red dates (seeds removed)
1 litres of water
1 kampung chicken (cut into chunks)
2 tbs huadiao wine
Salt to taste
Some cooking oil

1) Heat up oil and fry beiqi, danggui n red dates until fragrant. Add water and boil for 5 minutes.

2) Add chicken, salt and wine and bring to boil. Cover and lower heat. Simmer for 40 minutes or until chicken is cooked.

3) Serve hot.

No-bake White Chocolate Cheesecake


White Chocolate No-bake cheesecake. I assure you wouldn't want to miss this. No heavy cream, no whipping cream, no gelatin, no egg, yet rich and creamy without the overwhelming sweetness. It was no surprise that it was a hit.

Makes one 7-inch cake

Ingredients A
200g oreo original or golden cookies (crushed) * you don't have to remove the cream.
80g butter (melted)
- Drizzle butter into crushed cookies and mixed well. Press cookie crumbs into the loose base cake tin and chill the crust in the fridge for at least 30 minutes or until firm.

Ingredients B
500g softened cream cheese (I use Philadelphia)
200g lite sour cream (Pura) *Important Note: let it stay at room temperature for 30 minutes. You don't use it cold.
30g icing sugar
300g melted white chocolate (baking chocolate or chocolate chips)
- beat cream cheese and sugar. Add sour cream and beat till combined. Fold in white chocolate.
- Pour the mixture onto the crust, level the mixture and cling wrap before chilling it in the fridge. Chill until firm (6 hours at least) or best overnight.

Dust with 1 tbs of premium cocoa powder before cutting. Serve with a cup of hot earl grey (my favorite!). Bon appetit! :)

免烤白巧克力芝士蛋糕。不过, 蛋糕无蛋喔。无奶油,无鲜奶油, 无吉利丁!

食谱可以做一个7寸的蛋糕。

材料A
200克 Oreo饼干 (无需取出里头的cream). 放入ziplog袋, 用棒压碎。
80克 牛油 可以用碗隔热水融化或用微波炉
做法:把融化牛油加入压碎的饼干, 搅拌均匀, 倒入7寸脱底圆蛋糕模里, 用汤匙压平, 做成蛋糕的底层。放入冰箱冷藏至少30分钟让饼干底凝固。 备用。

材料B
500克 (软化了的) 奶油奶酪
200克 酸奶油 (不可用刚从冰箱取出的, 放在温室让它没那么冷了才可使用)
30克 糖霜 (筛过)
300克 白巧克力 ( 可以用碗隔热水融化或用微波炉)
做法: 奶酪和糖打至融合。加入酸奶油,继续 打至混合。最后加入融化了的白巧克力, 搅拌均匀即可。
把奶酪糊倒入已凝固的饼干底。
再将奶酪糊的表面抹平。
用保鲜膜把蛋糕模包起,放入冰箱冷藏至凝固, 约6小时。最好放隔夜。
食用前, 在蛋糕表面撒/筛上可可粉, 味道更佳。

沏一杯热茶一起享用, 真是绝配, 人生一大享受哟。

Kawaii Mushipan


I have done Mushipan (蒸しパン)  back in 2013. But this time, I added a wee bit more sugar and made them into cute kitties. I have also done up a video and you can see it here. It's quite similar to what I have done to my traditional egg cakes

This recipe makes 4.
Preparation 10 min
Cook 15 min
 
Ingredients:
- 100g cake flour
- 50g castor sugar
- 60ml milk
- 1 egg
- 1 tsp baking powder
- 1 tbs vegetable oil
1) Sift and combine the flour and baking powder in a bowl.
2) Whisk the egg in another bowl and add in the sugar. Continue to whisk until combined.
3) Add in milk and mix well.
4) Fold in the sifted flour and baking powder until the batter is well mixed.
5) Add in oil and mix well.
6. Scoop batter into muffin tin lined with paper case. Fill each case 3/4 full.
7. Bring the water in the wok/pan to boil and lower the muffin tin. Cover and steam at medium heat for about 15 minutes or until the skewer comes out clean.
8) Remove from wok/pan, let cool slightly. Best serve warm (in my opinion).

Easy Prawn Paste Chicken Mid-Wings 虾酱鸡翅


Cooking Prawn Paste Chicken need not be tough. It's just the marinade that does most of the works. Marinate, fry, voila! Eat!

Ingredients:
16 mid-wings (about 600g)
3 tbs prawn paste
1 tbs oyster sauce
1 tbs sesame oil
1 tbs shaoxing wine
1 egg

1) Combine all of the above and let marinade in the fridge for at least 4 hours.

2) Prior to deep frying, coat wings with tapioca flour (1 cup or less), tap off excess flour and fry wings till golden.

Just so easy. Enjoy!

Lava Croquettes 爆浆可乐饼


As easy as ABC. Makes 4 gigantic croquettes (haha!) You can make them into 8 or 16 bite-sized balls though.

Ingredients:
- 650g potatoes
- 4 slices of cheese (sandwich slices)
- 40g breadcrumbs/crushed cornflakes
- 20g softened unsalted butter
- 1 egg
- 1 tbs corn flour
- cooking oil (for spraying)
salt and pepper to taste
dried parsley/coriander (optional)

1) Boil washed potatoes (with skin) until soften. Do a skewer test/fork test. Potatoes are done when the skewer/fork slides easily to the centre of the potatoes.

2) Peel off skin of the potatoes and mash them with a masher. Add butter, dried herbs, salt and pepper to taste. Leave to cool before shaping the balls.

3) Divide mashed potatoes into 4 portion. Roll into ball and flatten it. Fold cheese in quarter and lay on the centre of mashed potatoes. Wrap up the cheese by shaping into ball. *The reason for shaping into balls is that the croquettes will be evenly bake without the need to flip in order to get both side of the crust crispy - lazy people like me are just too lazy even to flip :P

4) If the balls aren't too soft to handle (otherwise you may want to chill it for an hour or two), coat it with the flour, lightly tap and shake to remove excess flour, dip into beaten egg and coat with breadcrumbs/crushed cornflakes.

5) Do note that the mashed potatoes and the cheese can already be eaten on its own. Prolong cooking is not require. The baking/frying process is just to crisp the crust and melt the cheese within. Hence, if you are going to fry them, when the crust turns golden brown, they are done. To bake, spray some cooking/olive oil on the surface of the croquettes and bake in a pre-heated oven at 180c for 20 minutes.
Croquettes are such a versatile dish. Always a hit with kids and even adults. Apart from being meatless, you can try the salmon version too.

Basic Vanilla Cupcake


It has been a long time since I last bake. I miss baking :( Here's a basic vanilla cupcake for you :)

This recipe makes a dozen.

Ingredients:...
- 125g self-raising flour
- 125g softened unsalted butter
- 100g confectionery sugar
- 2 eggs
- 50ml milk
- 1 tsp vanilla extract

For butter-cream frosting
- 200g softened butter
- 200g confectionery sugar
- 1 tbs milk
In a mixer, whisk the butter until pale. Add sugar and milk and whisk until combine.

1) In an electric mixer, beat butter and sugar.
2) Whisk in vanilla extract, eggs and milk. Beat till combine.
3) Add in half of the flour, continue to beat. Add the remaining and beat till the mixture are just combined.
4) Distribute the mixture into a 12-hole muffin pan lined with cupcake liners and bake in pre-heated oven at 180c for 15mins or until done.
* Do a pick test to make sure the pick comes out clean and its done.

Purple Sweet Potato Cheesecake 紫番薯芝士蛋糕




Personally, I feel that the texture of this purple sweet potato cheesecake can be improved. Meanwhile, Let's make do with this first :) If you like cheesecakes, you may like these original flavor Beary Cute Baked Cheesecake and chocolate flavor Schnauzer Inspired Chocolate Baked Cheesecake too.

This recipe makes 6 serving of muffin-sized cheesecakes
Preparation 10 min
Bake 20 min
Chill at least 4 hours, best overnight.

Ingredients:
- 1 block (250g) of cream cheese - cubed and softened (Any brand is ok. I used Philadelphia)
- 30g of castor sugar
- 100g purple sweet potato (steamed and mashed)
- 6 oreo golden cookies
- 1 egg
- 1/4 tsp cinnamon

For decor:
- 6 oreo cookies (separate all the cookies and retain only the side with cream)
- 6 oreo golden cookies (separate all the cookies retain only the side with cream)
- 18 roasted whole almonds
- 12 chocolate chips

1) Line each cupcake case with 1 Oreo cookie. Set aside.

2) Beat cream cheese and sugar until combined. Add purple sweet potato and cinnamon. Continue to beat till well mixed. Add the egg and continue to beat until just combined. *Note: Do not over-whisk after beating in the egg. It will incorporate lots of air into the mixture causing the cake to crack easily during baking.

4) Scoop and distribute the mixture evenly into the 6 cases, decorate as shown in pictures above using the chocolate chips, almonds the oreo cookies. Bake in pre-heated oven at 150deg for 20mins. **Do not worry if the cheesecakes still crack during baking. Any cracks will fuse after cooling in room temperature and a chance that it will disappear completely after chilling. Even if it did not disappear completely, it wouldn't look obvious after chilling.

4) Leave baked cheesecake to cool at room temperature prior to refrigerating. Refrigerate for at least 4 hours before consuming (best over-night).

Stir-fried Tomato with Eggs 番茄炒蛋


A fairly simple home-cooked dish. Stir-fried tomato with eggs. It may not look appetising but the nutrition value is certainly high.

Ingredients:
- 4 eggs
- 2 big tomatoes (roughly 250g in total weight. Cubed)
- 1 sprig of spring onions (cut into 0.5cm)
- 4 tbs ketchup
- 2 tsp light soya sauce
- 1 tsp sesame oil
- pinch of pepper

1) Lightly whisk eggs after adding the light soy sauce, sesame oil and pepper. Set aside.

2) Heat up a little oil in the pan/wok and stir fry tomatoes and spring onions. Add ketchup and cook until a little soft. Dish out and set aside.

3) In a clean wok, heat up a little oil and stir fry eggs till half done. Add in (2) and stir fry until done.

So simple isnt it? Enjoy!

Huai San Soup 淮山排骨汤









 Tasty soup that supplements the body, nourishes the yin and improves intellect.

Ingredients:
- 450g pork ribs or lean meat
- 450g Huai Shan (de-skin and cut into chunks)
- 20g wolfberries (rinsed)
- 20g dried longan (rinsed)
- 1 tangerine peel
- 12 cups of water
- salt to taste


1) Wash and scald pork.
2) Bring water to boil. Add pork, huai shan and tangerine peel. Bring to boil again and reduce heat. Simmer over small heat for 2 hours.
3) 15 minutes prior to turning off the heat, add the wolfberries and dried longan.
4) Add salt to taste.

浓郁芳香, 滋补养身, 养阴益智。

材料:
- 排骨或瘦肉 450克
- 淮山 450克 (去皮切块)...
- 枸杞 20克 (略洗)
- 龙眼干 20克 (略洗)
- 陈皮 1 块
- 水 12 杯 (注: 1杯约250毫升)
- 盐少许

1) 排骨洗净, 用沸水烫过。
2) 把水煮沸, 加入烫过的排骨, 淮山与陈皮。再煮沸, 然后以小火煲2个小时。
3) 息火前15分钟加入枸杞和龙眼干。
4) 加盐调味即可。

Steamed Prawns with Minced Garlic 蒜泥蒸虾


Too many prawns for this lazy mommy to handle. For a better presentation,  I suggest that after you'd slit open the back of the prawn, spread open the slit and use the back of a knife to pound it lightly. This will prevent the prawns from curling when cooked.

Ingredients:
- 20 medium-sized prawns
- 10 to 12 clove garlic (minced)
- 2 sprig spring onion (chopped)
- 2 tbs huadiao wine
- 4 tbs light soy sauce
- 4 tbs water
- pinch of salt

1) Clean prawns, trim away feelers, de-vein and cut slit on the back. Arrange prawns on a plate.

2) Heat up some oil and fry garlic until fragrant. Take care not to over fry the garlic. Just make sure the garlic turned slightly browned.

3) Spread and sprinkle garlic evenly over prawns especially in the back opening of the prawns. Sprinkle some salt and drizzle over the wine.

4) Bring water in steamer to boil and steamer prawns over high heat for 5 minutes until the prawns turned completely red. Remove from steamer and scatter spring onion over prawns.

5) Combine the soy sauce and water. Heat up mixture in the wok or a small pot and drizzle mixture over prawns.

Chocolate Mug Cake


I have gotten a new microwave oven from my mother-in-law. Most people use the microwave oven just to heat up food. Other than heating up food, shouldn't the microwave oven be able to do more than just that? It doesn't come cheap *I was lucky to get it 'free'* and takes up quite a bit of space in the kitchen counter top and so I think we should make it more value for money *okay ideally speaking* ;)

Honestly, I cant say this is the best chocolate cake. However, if you need a fuss-free quick fix to your urge for a chocolate cake in the middle of the night or when you are busy, this does the trick. I reckon, we should be practical and not ask too much from a 5-minute recipe using the microwave oven? :)

Preparation 3 min

Microwave 2 min

Serving size 1 pax

Ingredients:
- 1 egg
- 2 tbs unsweetened cocoa powder
- 2 tbs top flour/cake flour
- 2 tbs vegetable oil
- 3 tbs milk
- 3 tbs icing sugar

1) In a mug, combine the oil, milk and egg and whisk lightly using a small balloon whisk.

2) Sift in the flour, sugar and cocoa powder and continue to whisk all the ingredients until well combined.

3) Microwave at high powder for 2 minutes. Note: I was using The Cornell Microwave Oven with max power of 800w. And do not be alarmed if the content rises in the oven coz it will shrink when cooled.

Mini Chocolate Baked Cheesecake




Original recipe from this Star Recipe by Imelda. If you'd like and made the Beary Cute Baked Cheesecakes, you might like to try this out too. In fact, my DD2 prefers these chocolate flavoured ones. One of my readers actually added artificial brown coloring to entice her girl into eating the original flavour cheesecake since the child only fancy chocolate flavoured food. In my humble opinion, think adding chocolate will make it taste better. I do use artificial coloring at times but I try to avoid them if possible. If you really need colors to make the food looks appetizing and appealing, perhaps natural coloring derived and extracted from vegetable source would be more ideal. If you happen to read this, perhaps you might like to give this recipe a try? :) Hope your little girl will like it like I do - I am a huge fan of chocolate too! ;)
And and, here's the Schnauzer look-a-like cheesecake just for you Jamie. Jamie and his beloved Schnauzer, Ted are my inspiration for this design.
This recipe makes 6 serving of muffin-sized cheesecakes

Bake 20 min

Ingredients:
- 1 block (250g) of cream cheese - cubed and softened (Any brand is ok. I used Philadelphia)

- 50g semi-sweet melted chocolate ( I used VanHouten)
- 6 oreo cookies
- 1 egg

For decor:
-  4 and 1/2 oreo cookies (separated as shown in below pic)
- 18 pieces of chocolate chips

1) Line each cupcake case with 1 Oreo cookie. Set aside.

2) Break chocolate into small pieces and place them into a heavy pot. Melt chocolate under small heat. Once chocolate started to melt, remove pot away from heat source. Continue to stir chocolate until completely melted. Alternatively, you may like to use the microwave or water bath method.

3) Beat cream cheese and sugar until combined. Add the egg and continue to beat until just combined. *Note: Do not over-whisk after beating in the egg. It will incorporate lots of air into the mixture causing the cake to crack easily during baking. Fold in the melted chocolate and stir gently with a spatula until combined.

4) Scoop and distribute the mixture evenly into the 6 cases, decorate as shown in pictures above using the chocolate chips and the balance cookies. Bake in pre-heated oven at 150deg for 20mins. **Do not worry if the cheesecakes still crack during baking. Any cracks will fuse after cooling in room temperature and a chance that it will disappear completely after chilling. Even if it did not disappear completely, it wouldn't look obvious after chilling.

4) Leave baked cheesecake to cool at room temperature prior to refrigerating. Refrigerate for at least 4 hours before consuming (best over-night).

Thai-Style Garlic Prawns


I can never have enough for prawns. By now, you should know my love for prawns is so strong, haha...High cholesterol? Eat first then say. My diet consists of mainly chicken, vegetables and seafood so... unless I turn vegetarian which is, honestly, I can't as yet. But I try to practise eating more vegetables than meat on every meal (2 vegetables + 1 meat when I have chup chye bng outside) or have a 'meatless' meal, that is, having bread only. That isn't difficult. Make yourself a Ovo-lacto vegetarian during breakfast. 2 slices of bread, 2 eggs and a glass of milk just sounds so healthy. Not tough right? :)

Meanwhile you might like to try out this fuss-free and easy-peasy Thai-style garlic prawns. Here goes:

Ingredients:
- 500g prawns (the weight after de-shelled but with the prawn head still on)
- 2 tsp sugar
- 1/2 tsp pepper
- 3 tsp fish sauce
- 1 tbs chopped coriander stem
- 5 cloves crushed garlic
- pinch of salt

1) Clean prawns, de-shelled and de-veined. Place cleaned prawns in a big bowl and add in the sugar, pepper, fish sauce, chopped coriander stem, crushed garlic and pinch of salt. Mix well and leave prawns to marinate for 20 minutes.

2) Heat up 2 tbs of oil in pan, add everything in (1) including the marinade and stir-fry prawns until done. The prawns are done when turned completely red.

Teriyaki Salmon


 
Easy teriyaki salmon anyone? No pre-mix. MSG and preservatives free :) Note this recipe makes 2 adults serving. As seen above was just 1/2 the portion of an adult's serving because it was meant for my little gal who doesn't take a lot of fish.
 
Serves 2

 The ingredients:
- 250g of salmon (cut into 2 or 3 slab to your preference)...
- 2 tbs corn flour
- 2 tbs oil
- pinch of salt & pepper
- sesame seed to garnish (optional)

The teriyaki sauce:
- 4 tbs (60ml) of soy sauce (Not an Ad. My preference Kikkoman blue label)
- 4 tbs (60ml) mirin
- 1 tbs (15g) fine sugar

1) Cut salmon and seasoned with salt & pepper. Set aside for 15 minutes.

2) Combine ingredients for sauce. Mix well and set aside. *Note: no worries of sugar not dissolving well coz the sauce gonna be heated up later and the sugar will dissolve completely.

3) Heat up oil. Coat salmon thoroughly with corn flour, shake off excess flour prior to pan-frying. *Note if it's a thick cut, u might want to cook the side with skin first, otherwise, u can fry one side at a time.

4) Dish out salmon when done. Using the same pan, add the sauce and bring it to a boil and until sauce is slightly thicken.

5) Drizzle sauce over salmon and sprinkle some sesame seeds to garnish.

Sushi 寿司

 
I assume everyone knows what is Sushi. Yes, Japanese food. Basically, Sushi has a base of vinegared rice and complemented by other ingredients, giving a few examples, like raw fish, other seafood like prawns, crab meat... Vegetables like cucumber, carrot and egg like tamagoyaki. There are many kind of Sushi which arises from the different types of fillings, toppings, condiments, and preparation used. I am no experts in making Japanese food, just an interesting and cute one for you Jeanie :)

Ingredients
- 1 cup Calrose Rice (I used Australian Kangaroo brand which is good for fried rice, Sushi and congee)
- 1 tbs seasoned rice vinegar (I used the brand Mitsukan. Note that this brand comes into 2 different type. One is the rice vinegar and the other is the one I bought, the seasoned rice vinegar. If you are buying the rice vinegar, as indicated on the label, you will need to add salt and sugar. So I opted for the latter for convenience sake since it's already seasoned.)
- Ingredients of your choice (I used sausages, nori, cheese and sesame seeds to make the 'octopuses')

* Most of the time, I make purchases at my convenient. So normally, I visit the supermarket located near my house for groceries and necessities. Other than that, when we eat out, I will visit the nearby supermarket for ad-hoc purchase too. I have no idea if there are other brand of better quality, but these were the only available brands when I need to get the items for Sushi making.

1) Use the measuring cup that comes with your cooker, measure one cup of the calrose rice and wash the rice thoroughly until water runs clear. Cook with appropriate amount of water (1 cup water to 1 1/2 cup water for the brand I was using.)

2) Once rice is cooked, transfer rice out into a bowl (I read that wooden bowl and spoon are preferred coz traditionally cooked rice is being transferred into a hangiri for mixing with the vinegar, salt and sugar. However, is there something more than adhering to the tradition? Seriously, I don't know. And I was using a ceramic bowl and plastic rice scoop.) and mix in the vinegar while the rice is still hot. Set aside to cool completely and you are ready to mould the rice and add your favourite ingredients.

3) Optional - See the pictures below to see how I make the 'octopuses'

 Make cuts on the sausages so that there will be 8 'arms'. Side track a bit, do you know that octopus has arms and not tentacles and squid and cuttlefish have 8 arms and 2 tentacles. Read here. Cook the 'octopuses' in a boiling pot of water and drain when done.
 
 
 Wash and cook the rice in the rice cooker. When done, transfer rice from the
cooker into a bowl and mix in  the seasoned vinegar while the rice is still hot.
 
 
 Mix well.
 
 
 Scoop rice into appropriate Sushi mould. This is a tad too big
coz it was supposed to be a Onigiri mould, haha.. :P
 
 
 Close lid so that the sushi will take shape.
 
 
 a) Use cheese and sesame seeds to make the eyes.
 b) Slice cooked penne or macaroni to make the mouth.
c) Cut nori into strips as ropes to 'tie' the 'octopuses' *feeling naughty :P*

Banana Crepe with Ice-Cream


Ingredients:
- 125g top flour
- 200ml banana milk
- 1/2 cup (160ml) water
- 2 eggs
- 2 bananas
- Vanilla ice-cream
- Icing Sugar - Optional

1) Mix flour and eggs in a big bowl. Pour in milk gradually and continue stirring. Add in water and continue to stir till combine. Strain the batter into another bowl. Wrap with cling wrap and let rest in the fridge for 30 minutes.

2) Using a round pan (24cm preferred to aid in making a more regular-looking crepe but this is optional), heat up the pan and smear some oil in it. Over low heat, ladle batter into the pan. Swirl the pan so that the batter spread evenly in the entire pan. Fry until crepe is cooked and set aside on a plate. Repeat until batter is used up. Let the crepes cool completely before using.

3) Slice bananas and set aside.

4) Place a crepe on a plate, scoop some ice-cream and place on the centre of crepe, put sliced banana on top of ice-cream and proceed to wrap up. Dust with icing sugar if desire. Serve immediately,

Easy Ketchup Prawns 蒜茸茄汁虾


My favourite prawns in Ketchup! This is my own recipe. Sometimes I cook based on 'agak-ration' and intuition. I may be new to blogging but I have been cooking for years. To be exact since the year 2000 when my first-born started taking solids and after we got our own home. Like what Wokkingmum told me, we don't owe anyone any explanation and I don't think I need to explain how the recipe came about every time I blog. But still, once & for all, let me tell you that I learnt it from friends, from cookbooks, from recipe sharing websites, from other food bloggers or from my mom/mother-in-law. Sometimes I do tweak the recipe to suit my needs and liking. If I do credit back means I will.

In any way, if you dislike me, you are free to stay away from my blog and for god's sake please do not badmouth or malign me. It will do neither you nor me any good. See here if you do not know what's the meaning of malign.

Okay, cut the crap, here's MY recipe.

Serve 6

Ingredients A:
- 20 big prawns
- 2 tsp minced garlic
- 2 tbs oil
- 2 eggs (lightly whisked)
- 2 sprigs of scallion, cut (for garnishing)

Ingredients B:
- 10 tbs of ketchup
- 10 tbs water
- 1 tbs huadiao wine
- pinch of salt and pepper

1) In a bowl, combine ingredients B and mix well. Set aside.

2) Heat up the oil, add the garlic and fry till fragrant.

3) Add prawns and stir-fry until the prawns are half done. Stir in sauce from (1) and stir-fry prawns until completely cooked.

4) Stir in the eggs and stir-fry briskly for a while, about a minute. Serve immediately.

Jam Drops

 
This is an original idea. Jam Drops looking like mini traffic lights :)

Using 1 tsp dough, yield 24 pieces in set of 3's or 72 individual pieces

Ingredients:
- 250g plain flour (all purpose flour)
- 125g butter
- 100g castor sugar
- 1/2 tsp baking powder
- 1 egg
- 2 tbs each of the strawberry/raspberry, apricot/peach/pineapple and apple jam

1) Sift the baking powder and flour into a bowl. Set aside.

2) Beat butter and sugar until pale and fluffy. Add the egg and beat until combine. Add the sifted flour and baking powder into the butter, sugar and egg mixture. Knead to form a dough.

3) Using 1 tsp of the dough, roll the dough into a ball and place on the baking tray lined with parchment paper. Use the finger to make a dent in the ball. Make another 2 of it and place them vertically close together to form 1 piece of cookie.

4) Fill each dent with a little Jam. From top to bottom, strawberry, apricot and apple.

5) Bake in pre-heated oven at 180c for 10 minutes. Leave on rack to cool before consuming or u can store in air-tight container and consume within 3 to 5 days.
